Sick Day


Stay-at-home day = homemade soup day. Easy, and all made from staples that I now keep in the fridge and pantry. 1 bag of spinach sauteed in 1 T of olive oil with 3 cloves minced garlic. One can of cannellini beans, drained. One can of low sodium /low fat chicken broth. A handful of spices - black pepper, oregano, basil, rosemary. Bring to a boil, simmer about 20 minutes. Serve however you'd like - with a sprinkling of parmesan or mozzarella cheese, crusty bread, crackers, or add in some noodles. Enjoy and feel better!

Oh, and I forgot until I was eating it - I often used diced onions to add to the richness of the flavor, too. I just forgot to use them this time!
